“I Can Cook!” Brownie S’mores
These S’mores are a perfect project for kids just learning to use the kitchen. No need for an open flame, campfire or a mix-master! They stir up by hand and are fun to assemble. Simply start with a “box mix” for brownies and then you jazz them up!

- 1 box brownie mix (plus ingredients on package directions)
- 4-5 graham crackers
- 4 Hershey chocolate bars
- Large marshmallows
Preheat oven to 350°
Spray a 9 x12 or similar glass baking dish with plenty of non-stick cooking spray, going up the sides. (The marshmallows will make the brownies stick, so a lot of spray makes a big difference.)
Pour brownie mix into a mixing bowl and follow the package directions.
Pour half of the brownie batter into your prepared baking dish.
Add a single layer of graham crackers, each one broken in half to make a square. Add a single layer of chocolate bars, just to cover the graham cracker. Add a marshmallow on top; we used the “S’mores” shaped square marshmallows and cut them so they were not as “tall”. Try to keep them from the edge of the pan. Pour the remaining brownie batter on top over the marshmallows.
Bake 45-50 minutes. Let cool completely. Cut into squares.
OK, we’ll come clean: these are messy! But every person at our back yard campout (from granddad to the 18 month old!) loved them, so go ahead, and bring some wet wipes! We modified this fun recipe just a little from http://www.wineandglue.com/2014/04/smores-bark.html
- 4 cups milk chocolate chips
- 3/4 cup white chocolate chips
- 1 cup marshmallow fluff
- Graham crackers, pulsed in a food processor
Melt 2 cups chocolate chips (I like using a double boiler rather than a microwave chocolate won’t seize.) Spread the chocolate over a wax lined pan set inside a 9 x 12 or similar rectangular baking pan. Place in the refrigerator for about a half hour.
Melt the white chocolate chips, once melted, add the marshmallow fluff and stir well. Spread the marshmallow layer over the hardened chocolate layer.
Press the crumbled graham crackers into the marshmallow layer. Refrigerate for 30 minutes.
Melt 2 cups of chocolate chips and very gently spread it over the graham cracker layer. Freeze for about two hours. Once nice and hard, break it apart and serve.
